PALEY CENTER FOR MEDIA, THE: PALEY AFTER DARK: AN EVENING WITH CHEF MARCUS SAMUELSSON {PUBLIC SHORT VERSION}
Summary
One in a series of evenings and special screenings at The Paley Center for Media in New York. Held at the Red Rooster in Harlem, NY, this evening celebrates its head chef Marcus Samuelsson, winner of "Top Chef Masters" season two. Pat Mitchell (president and CEO, The Paley Center for Media) offers opening remarks before introducing moderator Richard Martin (editorial director, "Food Republic"). Martin moderates Samuelsson, and they touch on such topics as: Samuelsson's work at the restaurant Aquavit in 1995 and his goals of "aspiring and inspiring"; how his success at Aquavit affected his career and the increasing importance of online reviews for the fine dining business; Samuelsson on the early days of Food Network and how new media has affected restaurant advertising; how the landscape of New York City altered Samuelsson's view of global cuisine and why he chose Harlem as the site for Red Rooster; how Samuelsson encouraged "transparency" in the opening of Red Rooster using online media such as Twitter; how Samuelsson hopes to encourage a wider customer base for the restaurant; Samuelsson's thoughts on the history of cooking as a profession and how it relates to his television appearances; and the importance of philanthropy and its inclusion on Samuelsson's website. Questions from the audience then lead to a discussion of the following topics among others: how Samuelsson gained his passion for cooking; and Samuelsson's hosting of the first state dinner for United States President Barack Obama.
