
MOLTO MARIO (TV)
Summary
One in this series of instructional cooking programs
hosted by renowned chef and restaurant owner Mario
Batali, who specializes in creating Italian dishes with
his own unique touch. In this program, Mario cooks
three dishes that are commonplace in Italian villages,
particularly in Sardinia. First, Mario demonstrates how
to make barely leavened flat-bread by creating a
makeshift wood-burning stove with a conventional oven.
After reviewing ingredients to be used in the bread mix,
Mario explains the most important aspect of making
bread and indicates that the dough must bake in an
extremely hot oven before baking at a lower temperature.
Next, Mario creates a simple panna fratal dish, which
the flat-bread accompanies nicely, and suggests a type
of tomato sauce to top off the dish. Then, Mario
demonstrates how to prepare partridges, explaining the
reasons and ways that certain poultry items are
preserved in oil. After cleaning and cutting the
poultry, he shows how to marinade the pieces and
preserve them, noting that lasting freshness depends on
storage temperatures. As the program concludes, Mario
suggests some vegetables to accompany the dish.
